Steeped — adds color and caramel sweetness

Centennial(10% AA)
60 minbittering

Cascade(5.5% AA)
15 minflavor

Cascade(5.5% AA)

Safale US-05 (American Ale)

Instructions

Heat 3 gallons of water to 155°F. Steep Crystal 40L in a muslin bag for 20 minutes.

Remove grain bag. Bring to a boil and stir in LME.

At boil, add 0.75 oz Centennial for bittering (60-minute addition).

At 45 minutes, add 1 oz Cascade for flavor (15 min remaining).

At 60 minutes, turn off heat. Add 1 oz Cascade at flameout for aroma.

Cool wort rapidly to 68°F. Transfer to fermenter and top to 5 gallons.

Pitch yeast at 66-68°F. Ferment for 2 weeks.

Bottle with 3/4 cup corn sugar. Condition 2 weeks.

Brewer's Tips

Centennial provides the clean bitterness backbone while Cascade adds citrus aroma.

For a hoppier version, add 1 oz Cascade as a dry hop during the last 5 days of fermentation.

Try to ferment on the cooler side (64-66°F) for a cleaner profile.
